03.01.Q02 : La filière viande bovine française : quelles caractéristiques, quels enjeux ?

Résumé : 

     La filière Viande Bovine a une importance stratégique en raison de sa contribution aux équilibres socio-économiques, territoriaux et environnementaux.
     La forte baisse des effectifs a entraîné un recul de la production supérieur à celui de la consommation, creusant le déficit net en viande bovine alors que nous avons le cheptel et le potentiel de production les plus importants d’Europe.
     Pour enrayer la décapitalisation, développer une activité d’engraissement compétitive et reconquérir notre indépendance alimentaire, la filière se trouve confrontée à trois défis majeurs : l’attractivité de l’activité d’élevage, l’adaptation des produits aux évolutions de la consommation et la valorisation des services rendus à la société.

Abstract :

     The beef sector is of strategic importance due to its contribution to socio-economic, regional, and environmental balance.
     A sharp decline in herd numbers has led to a drop in production that outpaces the decline in consumption, widening the net beef deficit—even though we possess the largest cattle herd and production potential in Europe.
     To halt the reduction in livestock numbers, develop a competitive fattening sector, and regain food sovereignty, the industry faces three major challenges: making livestock farming an attractive profession, adapting products to changing consumption patterns, and properly valuing the services provided to society.
